Chef Victor Albisu’s Award-Winning D.C.-Based Taqueria Will Open In Hill Center At Green Hills.

NASHVILLE, TN (March 1, 2024) – Today, Chef Victor Albisu, a James Beard-nominated chef based in the Washington, D.C. metro area, announces a March 12 opening date for Taco Bamba’s first Nashville location. Taco Bamba’s thirteenth overall spot will open at 4017 Hillsboro Pike, in the Hill Center at Green Hills shopping center, with a seasonal patio and full-service bar. Like all Taco Bambas, Nashville’s menu and design were created exclusively for the neighborhood. From unique artwork celebrating the thirteenth iteration of the concept to the menu with nods to Nashville and the people who influence it, Albisu has written another album to feed his fans.

The Menu

Jolena, a taco with crispy cornmeal crusted catfish, agave lime slaw, chipotle spiced ranch, and a pickled corn salad. Another taco, the Broken Holas features Tennessee whiskey BBQ pork carnitas, potato salad, chipotle mustard, and tobacco onions. The All American Chica torta is a Vegetarian ensemble of garlic herb cream cheese spread, cucumber, roasted peppers, avocados, and pickled Fresnos, while the El Pimento Empanada stuffs perfectly flaky pastry with molten pimento cheese and roasted jalapeño.

Sharp Dressed Hombre, one of Taco Bamba Nashville’s signature menu items. The taco features a slow-roasted brisket cooked in Billy Gibbons and Tim Montana’s Whisker Bomb hot sauce, which will also be available throughout the restaurant. The taco is dressed (sharply) with pepitas, sweet and spicy slaw, citrus onion, and pickled jalapeño.

Bar Program

Ole Yella, with mezcal, bourbon, Chinola passion fruit liqueur, pineapple Jarrito, and chocolate mole bitters. The His Brother Is Worse mixes reposado tequila, al pastor-spiced grapefruit juice, orange-scented agave, and lime juice.

About Chef Victor Albisu:

Victor Albisu is the chef/founder of Taco Bamba, which has thirteen locations across the District of Columbia, Northern Virginia, Maryland, Raleigh, N.C., and Nashville, Tenn., with forthcoming spots in Sterling, Va., and Richmond, Va. In 2015, the Restaurant Association of Metropolitan Washington (RAMW) honored Albisu as Chef of the Year, and in 2020 and 2016 he was nominated for a James Beard Foundation award as Best Chef Mid-Atlantic. With more than a decade of experience in fine dining and upscale French, American, and Latin American restaurants, Albisu combines his culinary education with his Latin American heritage to bring a unique style of cuisine to his restaurant concepts.

Outside the kitchen, Albisu is active in global culinary relief initiatives, including extensive work with CARE and World Central Kitchen, for whom he was a founding board member and has traveled to Cuba, Nicaragua, and Peru, among other destinations. He is a member of the American Culinary Corp, a partnership between the Department of State and the James Beard Foundation. Albisu co-founded Smile on the World, a non-profit group of chefs and doctors who provide aid and medical care to underserved communities, and with whom he co-led a relief trip to Peru in early 2020. In 2015, Albisu competed on Food Network’s Beat Bobby Flay and bested the host and grill master with his signature dish, steak & eggs. Albisu has also appeared as a guest judge on Telemundo’s Top Chef Estrellas and the FOX TV series Hell’s Kitchen.
